Roasted Cauliflower Queso

You are going to want to add this Roasted Cauliflower Queso to your Super Bowl snack line up for tomorrow 🏈
Recipe:
For the cauliflower:
Olive oil (I use spray)
1/2 teaspoon kosher salt or JF Spicy Salt
1/2 teaspoon black pepper
1/4 teaspoon turmeric
1/4 teaspoon paprika
Spray the head of cauliflower with olive oil and sprinkle with the spices. Cover with foil and bake on a baking sheet at 400°F/200°C for 25 minutes until the cauliflower is off and golden. Chop the cooked cauliflower into chunks.
For the queso:
1 poblano pepper, diced
2 teaspoons olive oil
1/2 onion, diced
2 garlic cloves, minced
Pinch of salt & black pepper to taste
1 1/2 cups Half & Half
2 teaspoons cornstarch
8 ounces sharp white cheddar cheese, freshly grated
8 ounces monterey jack cheese, freshly grated
Sauté the poblano pepper and onion over medium high heat until softened. Add the garlic and cook for another minute. Place the cauliflower, pepper & onion mixture in a blender with Half & Half and cornstarch . Blend until smooth. Poi the mixture into the pan the onion was cooked in and stir in the cheeses over medium heat until melted and smooth. Serve the queso topped with chopped cherry tomatoes and finely sliced green onion. (Or use whatever queso toppings you prefer).
Serve with tortilla chips.
