The viral recipe by @grilledcheesesocial that is currently dominating your feed is indeed as good as it looks. Who knew roasted feta was the “cream” we never knew we needed. A few simple ingredients, a one-pan roast and you have silky smooth bowl of goodness in no time.
Recipe:
1 butternut squash peeled and cubed
1 small garlic bulb, halved
Olive oil,
One 8oz block of feta, I used @athenos feta
JF Spicy Salt & black pepper
A drizzle of honey
A few sprigs of fresh thyme (recipe calls for sage but I prefer thyme)
1 quart (4 cups) vegetable or chicken broth
Chili oil for serving
Preheat the oven to 400°F/200°C. In an ovenproof dish toss the butternut and garlic with olive oil . Nestle the block of feta in the middle of the dish. Season to taste, drizzle with honey and top with sprigs of thyme.
Bake for 45 minutes. (I did not cover the dish as per the recipe)
Remove the thyme sprigs and place the roasted squash, feta and garlic in a blender with the broth. Blend until smooth and serve with a drizzle of chili oil.
