Protein-packed Roasted Tomato Soup

Recipe:
8 Roma tomatoes, halved
1 medium carrot , peeled and cut into chunks
1/2 red onion, thickly sliced
4 cloves garlic, peeled
Olive oil for coating vegetables
Salt and black pepper to taste (I use Spicy Salt)
1-2 teaspoons sugar
1/2 cup cottage cheese
1 tablespoon miso paste
2 cups bone broth
1 15oz can organic tomato sauce
Grated sharp cheddar cheese for topping
Place the vegetables on a sheet pan and toss with oil and seasoning. Roast at 400°F/200°C for 25 minutes.
Place roasted vegetables, cottage cheese, miso paste and bone broth in a large blender and blend . (or blend in 2 batches).
Pour the soup into a large pot and add the tomato sauce. Bring to a soft boil for 10 minutes. Check the seasoning and serve with shredded cheddar cheese or chopped basil.
