Miso Salmon with orange and fennel.
Miso marinade/ sauce:
3 tablespoons white miso
2 tablespoons honey
1 tablespoon sake or mirin
1 teaspoon sesame oil
1 tablespoon freshly grated ginger
2 teaspoons fresh orange zest plus 1 tablespoon juice
2 oranges, thinly sliced
1 - 2 fennel bulbs, thinly sliced on a mandolin
Fennel fronds for decorating
Bake at 375 for 12-15 minutes. Enjoy!
