The most underrated vegetable in your refrigerator just jumped the line and is you new favorite side dish. Brushed with miso butter, roasted and then glazed with a vinegar broth. Is there anything better than salt and vinegar flavoring? I don’t think so…
Recipe:
1 head of green cabbage, cored and cut into wedges
Olive oil spray
2 tablespoons unsalted butter, softened
1 tablespoon white miso paste
Freshly ground black pepper to taste
1/3 cup vegetable or chicken broth
1/3 cup white vinegar
Steps:
Preheat oven to 425°F
Place the wedges of cabbage on a rimmed baking sheet and lightly spray with olive oil.
Mix the butter and miso paste in a small bowl and brush the mixture into all sides of the cabbage.
Roast the cabbage for 15 minutes and then turn the wedges over and roast for another 15 minutes.
Mix the vinegar and broth together and pour over the cabbage wedges. Roast for a final 15 minutes until the liquid is almost evaporated.
Sprinkle with a little flaky sea salt and serve
