A blender and tart shell. Who would believe lemon tart could be this easy? Use your favorite homemade or store-bought pie pastry for the shell.
Recipe from

Recipe:

  • 1 Meyer lemon (unpeeled), cut into 8ths and pits removed

  • 11/ 2 cups superfine sugar

  • 8 tablespoons (113g) unsalted butter, room temperature

  • 4 eggs

  • 1 teaspoon vanilla extract

  • 1 9-inch pre-baked tart shell

Steps:

  1. Preheat oven to 350°F.

  2. Place all the ingredients (except tart shell) in a high-speed blender.

  3. Blitz until the mixture is very smooth.

  4. Pour into the pre-baked tart shell and bake for 40 minutes.

  5. Cool and sprinkle with powdered sugar.
