A blender and tart shell. Who would believe lemon tart could be this easy? Use your favorite homemade or store-bought pie pastry for the shell.
Recipe from
Recipe:
1 Meyer lemon (unpeeled), cut into 8ths and pits removed
11/ 2 cups superfine sugar
8 tablespoons (113g) unsalted butter, room temperature
4 eggs
1 teaspoon vanilla extract
1 9-inch pre-baked tart shell
Steps:
Preheat oven to 350°F.
Place all the ingredients (except tart shell) in a high-speed blender.
Blitz until the mixture is very smooth.
Pour into the pre-baked tart shell and bake for 40 minutes.
Cool and sprinkle with powdered sugar.
