My version of the most famous chopped salad of all time. The perfect meal prep lunch if you add the lettuce right before eating. I use butter beans instead of garbanzos but that’s just a preference. Salami is the original protein but turkey, chicken, canned tuna or hard boiled eggs are all great alternatives.
Serve with warm, crusty bread and good butter on the side.
Recipe:
1 head Iceberg lettuce, finely chopped
1 7oz/198g package Genoa salami, finely sliced
1 can butter beans or garbanzo beans, drained and rinsed
1 cup cherry tomatoes, sliced
1 English cucumber, diced
1/3 cup Kalamata olives, sliced
2/3 cup/80g shredded mozzarella cheese
1/3 cup chopped pepperoncini peppers
Optional add on : 2 hard boiled eggs chopped
Dressing:
4 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 clove garlic, grated
4 tablespoons grated Parmesan cheese
2/3 cup olive oil.
Salt and black pepper to taste
Place dressing ingredients in a blender for a creamy dressing. Add dressing to your salad and enjoy!
