My version of the most famous chopped salad of all time. The perfect meal prep lunch if you add the lettuce right before eating.

My version of the most famous chopped salad of all time. The perfect meal prep lunch if you add the lettuce right before eating. I use butter beans instead of garbanzos but that’s just a preference. Salami is the original protein but turkey, chicken, canned tuna or hard boiled eggs are all great alternatives.
Serve with warm, crusty bread and good butter on the side.

Recipe:

  • 1 head Iceberg lettuce, finely chopped

  • 1 7oz/198g package Genoa salami, finely sliced

  • 1 can butter beans or garbanzo beans, drained and rinsed

  • 1 cup cherry tomatoes, sliced

  • 1 English cucumber, diced

  • 1/3 cup Kalamata olives, sliced

  • 2/3 cup/80g shredded mozzarella cheese

  • 1/3 cup chopped pepperoncini peppers

  • Optional add on : 2 hard boiled eggs chopped

Dressing:

  • 4 tablespoons red wine vinegar

  • 2 teaspoons Dijon mustard

  • 1 clove garlic, grated

  • 4 tablespoons grated Parmesan cheese

  • 2/3 cup olive oil.

  • Salt and black pepper to taste

Place dressing ingredients in a blender for a creamy dressing. Add dressing to your salad and enjoy!
