No need for cookie cutters this holiday season. These gingerbread blondies have all the warm spicy flavor of a festive treat with much less effort…
Recipe:
1/2 cup/ 113g (1 stick) melted butter, slightly cooled
1 cup/220g packed brown sugar
1/4 cup/ 70g molasses
2 large eggs
1 cup/120g all-purpose flour
1/2 tsp. baking powder
3/4 tsp. kosher salt
1 tsp. pure vanilla extract
1 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. Mixed Spice
1/4 tsp. ground nutmeg
Lime Glaze:
1/2 cup powdered sugar
1 teaspoon coconut oil
1-2 teaspoons water
Instructions:
Preheat oven to 350°F/180°C
Whisk together the melted butter, brown sugar, molasses, eggs for 4 minutes.
Add the vanilla and salt and whisk to combine.
In a separate bowl whisk the flour, baking powder and spices together to combine.
Add the flour mixture to the butter mixture and fold to combine.
Pour the mixture into a prepared 8” square pan. Bake for 20-25 minutes.
Cool the blondies and top with lime glaze.
