No need for cookie cutters this holiday season. These gingerbread blondies have all the warm spicy flavor of a festive treat with much less effort…

Recipe: 

  • 1/2 cup/ 113g (1 stick) melted butter, slightly cooled

  • 1 cup/220g packed brown sugar

  • 1/4 cup/ 70g molasses

  • 2 large eggs

  • 1 cup/120g all-purpose flour

  • 1/2 tsp. baking powder

  • 3/4 tsp. kosher salt

  • 1 tsp. pure vanilla extract

  • 1 tsp. ground cinnamon

  • 1 tsp. ground ginger

  • 1/4 tsp. Mixed Spice

  • 1/4 tsp. ground nutmeg

Lime Glaze:

  • 1/2 cup powdered sugar

  • 1 teaspoon coconut oil

  • 1-2 teaspoons water

Instructions:

  • Preheat oven to 350°F/180°C

  • Whisk together the melted butter, brown sugar, molasses, eggs for 4 minutes.

  • Add the vanilla and salt and whisk to combine.

  • In a separate bowl whisk the flour, baking powder and spices together to combine.

  • Add the flour mixture to the butter mixture and fold to combine.

  • Pour the mixture into a prepared 8” square pan. Bake for 20-25 minutes.

  • Cool the blondies and top with lime glaze.
