Hot tip- cover the pan for a few minutes if you prefer your egg yolks a little more cooked.
Spray a small nonstick pan with olive or avocado oil and heat over medium high heat. Sprinkle the crumbled feta into the pan and cook for a few minutes until the moisture evaporates. Crack an egg over the center of the cheese. Cover the pan with a lid and cook for a minute or 2 until the egg is set and the edges of the cheese are crispy.
Meanwhile warm the tortilla (I hold it over a low flame on the cooktop) and then spread with avocado. Season with the avocado with salt and black pepper . Top with the feta fried egg and drizzle with chili crunch oil. Eat immediately!
