Cookies’n Cream Mini Ice Cream Sandwiches
When you just need a bite or two of ice cream not a whole sundae, this perfect little treat will hit the spot every time.
When you just need a bite or two of ice cream not a whole sundae, this perfect little treat will hit the spot every time. The possibilities are endless when it comes to flavor options but the Oreo Thins are mandatory - the ratio of cookie to ice cream is 10/10.
Recipe:
1 pint Cookies’n Cream Ice Cream, softened
1 pint Vanilla Ice Cream, softened
1 package Oreo Thins
1 cup (8oz) semi-sweet chocolate chips
1 teaspoon coconut oil
Sprinkles for decoration
Line a muffin pan with cupcake liners.
Place a cookie in each liner. Add a small
scoop of Cookies’n Cream ice cream on the cookie and flatten with the bottom of a measuring cup. Add another cookie on top of the ice cream layer and press it down lightly. (Pop the pan into the freezer for a few minutes if the ice cream gets too soft). Add another small scoop of ice cream and flatten to meet the top edge of the cupcake liner.
Place in the freezer for an hour.
Melt the chocolate chips and coconut oil in the microwave in 30-second increments until melted and smooth.
Drop teaspoonfuls of melted chocolate on each ice cream sandwich and immediately add the sprinkles on top.
Freeze for 30 minutes before serving.
Tip - Oreo Thins come in mint flavor too.
Use mint ice cream for one layer and chocolate ice cream for the second.
