Recipe:

1 Head of Cauliflower, steamed and chopped

3 tablespoons butter

1/4 cup all purpose flour

1/2 teaspoon mustard powder

1 teaspoon Worcestershire sauce

21/2 cups whole milk

2 cups grated sharp cheddar

2 cups grated Gouda cheese

Salt and WHITE pepper to taste

8oz Macaroni pasta, boiled in salted water for 5 minutes.


Directions:

Place the cauliflower upside down in a pot of boiling, salted water. Cover and cook until soft, about 12 minutes. Drain and chop the cauliflower. Set aside.

Melt the butter in a saucepan over medium high heat. Whisk in the flour and let the mixture cook for about a minute. Whisk in the mustard powder and Worcestershire sauce. Add the milk and continue whisking until the mixture is smooth and has thickened. Season with salt and white pepper. Add both cheeses and stir until the cheese is melted and incorporated.

Place the cooked macaroni and chopped cauliflower in the pot the cauliflower/ pasta was cooked in, and pour over the cheese sauce. Combine the mixture well and spoon into a buttered casserole dish. Top with additional cheese and sprinkle with Panko breadcrumbs.

Bake at 400°F for 20-30 minutes until the cheese is golden brown.
