Have you heard? Artichokes are the new Superfood. Here’s the easiest way to turn the healthiest vegetable into the prettiest flower…
Recipe:
Artichokes, lower leaves trimmed, stems and top cut off. Rub the tops with lemon.
Place prepared artichokes in salted, boiling water and add lemon wedges. Cover and boil until softened.
Small artichokes – 15 minutes
Medium artichokes – 30 minutes
Jumbo artichokes – 45 minutes
Artichokes are done when the leaves pull away easily.
Drain the cooked artichokes place on a parchment lined baking sheet . Carefully open leaves to form a flower. Drizzle with olive oil and sprinkle with grated Parmesan cheese. Bake at 350°F/180°F for 15 -20 minutes.
Serve with additional Parmesan and lemon juice. Enjoy!
