3 Minute Lemon Curd

A ridiculously easy recipe and who doesn’t love lemon curd? Silky smooth, not too tart, not too sweet with so many useful ways to use it or just eat it by the spoonful. Yum! Double the recipe for a larger quantity.
Ingredients:
1/2 cup/100g sugar
Finely grated zest from 1 lemon
1/4 cup/60ml lemon juice
1 egg yolk
2 large eggs
4 Tablespoons/56g salted butter cut into cubes
Recipe:
In a microwave-safe bowl, whisk together sugar, lemon zest, lemon juice and eggs until well combined.
Drop in the butter cubes, cover the bowl with plastic wrap and microwave for 45 seconds.
Whisk the mixture, cover again and microwave for another 45 seconds. Whisk well again. The curd should be thick enough coat the back of a spoon. If not return to the microwave for another 30 seconds.
Cover the curd and set aside to cool. It will thicken as it cools. If your curd has little streaks of egg white, push the mixture through a fine mesh sieve with a spatula.
