Who doesn’t love a one-pot wonder, especially when the endless dreary weather saps all cooking inspiration?
Store-bought rotisserie chicken or pre-cooked chicken breasts you meal-prepped, are the key to this quick and easy dinner…
Recipe:
1 cup uncooked orzo pasta
2 cups chicken brothJuice of 1 lemon
1 cup heavy/whipping cream
2 cups cooked sliced rotisserie chicken or we’ll-seasoned chicken breasts1/2 cup freshly grated parmesan cheese
salt & freshly ground pepper to taste
(I use jenniferfisher Universal Salt)2 cups fresh baby spinach
Optional: a pinch of red pepper flakes
If you have more time, sauté 1/2 onion, chopped & 1 minced garlic clove in olive oil. Then add the orzo and follow the directions.
Steps:
Place the chicken broth, lemon juice and orzo in a pot and simmer for 7 minutes, until most of the liquid has been absorbed (it should not be dry)
Reduce the heat to low.
Stir in the whipping cream.
Add the chicken and spinach and season to taste.
Cover the pot for 2-3 minutes.
Stir in the cheese and serve with additional cheese on the side.
